White Rabbit Dark Ale

A refreshing Dark Ale with balanced caramel and toffee malt tones on the palate finish with a reassuring bitterness. The open fermenters allow the yeast to run a little wild (without constraint), which delivers a complex, slightly fruity and raisin ester character to the beer and allows us to top crop the top fermenting ale yeast in its natural habitat. A careful balance of darker roasted grains gives us colour and a nice chocolate pudding-like flavour without heading down the burnt toast / Coffee flavours which are typical of a lot of Dark Ales and stouts.
